harvested at lower sugar contents than the target. With the exception of Malbec, the total acidity was above 5 g/L for all the red cultivars. In the case of the white cultivars, the total acidity was 6.3 g/L. As expected, the variation in pH was linked to the total acidity. In the case of Grenache noir, Tempranillo and Macabeo, the pH was however lower compared to the corresponding total acidity in the must.

The aim was to harvest the red and white cultivars at 24°B and 22°B respectively. Most cultivars were able to be harvested close to these targets (table 2). Touriga na ҫ ional, one of the late red cultivars, had to be harvested at 23.1°B to prevent serious crop losses. For the same reason Macabeo and Piquepoul blanc had to be
