CERTIFICATION

All grapes supplied to Olympic Fruit must be certified to GLOBALGAP, GRASP or BRC/IFS Packhouse Level. The minimum requirement is that all products must maintain certification through their entire consumer shelf life, including harvesting, transfer, supply to the customer, and the final consumer shelf life date. All varieties, farms, and plots must be grown and certified to GLOBALGAP standards. Olympic Fruit will not accept any product that is not certified to GLOBALGAP at the point of sale. Additionally, products from high-risk countries must undergo a third-party social audit. Accepted standards for these audits include BSCI, SA8000, Sedex SMETA, Fairtrade, Rainforest Alliance, SIZA, Fair For Life, Sustainably Grown, Naturland Fair, and ECOCERT ESR Standard.

FOOD SAFETY

All products supplied must be produced under a HACCP-based system for food production and safety in compliance with EC 852/2004 on the hygiene of foodstuffs. The focus should be on minimizing the risk of contamination to both the product and its packaging, with appropriate procedures and controls in place: PHYSICAL CONTAMINATION: This includes jewellery, glass, hard or brittle plastic, wood, paper, metal, pests (such as spiders, spider webs, insects, crickets, cockroaches, snails, scorpions, snakes, frogs), machine parts, equipment, or malicious foreign bodies. All products must be free from scissors, secateurs, knives, and scissor grease (which must be allergen-free and have a known allergen status). LIQUID CONTAMINATION: This includes water, diesel, lubricants, or oil contamination. INTRUDERS OR STOWAWAYS: Efforts must be made to secure the vehicle storage compartment, especially when crossing the channel from mainland Europe. Where practical and possible, avoid using the Calais crossing as it is considered a high-risk port. CHEMICAL CONTAMINATION: This includes pesticide residues, chemicals, PGRs, fertilizers, and cleaning chemicals.

BIOLOGICAL CONTAMINATION: This includes pathogenic bacteria or microorganisms, viruses, yeasts, fungi such as Botrytis and Penicillium. ALLERGENS: This includes sulphur dioxide. CROSS-CONTAMINATION: From raw materials or allergens ingested by personnel. From allergens produced on the same site. From allergens present in the raw materials’ history.

PLEASE NOTE that spider contamination is one of the most serious customer complaint issues and causes significant distress. Special effort should be made to remove spiders and spider webs from the product.

MRL SPECIFICATION SUPERMARKETS + EU MINIMUM STANDARD

MAXIMUM RESIDUE LEVELS The traces pesticides leave in treated products are called “residues”. A maximum residue level (MRL) is the highest level of a pesticide residue that is legally tolerated in fruit when pesticides are applied correctly (Good Agricultural Practice). RESIDUES <100% EU MRL Each individual residue must not exceed 100% of the applicable EU MRL, unless the packing is done directly for a supermarket. ACUTE REFERENCE DOSE (ARfD) The Acute Reference Dose (ARfD) is an estimate of the amount of a substance in food or drinking water that a person can ingest within 24 hours without significant health effects.

QUALITY SCORING SYSTEM

FRUIT INSPECTIONS The Standard Operating Procedures (SOP) regarding fruit inspections upon arrival can be requested via your contact person in Olympic Fruit.

EXTRA CLASS I TOLERANCE: 2.5%

The sample is free of any major defects, has less than 2.5% minor defects and is hard to firm. The fruit has an excellent coloration for the variety and is uniform in shape and calibration. The fruit is above Olympic Fruit CLASS I color plates and requirements.

NORMAL CLASS I TOLERANCE: 7.5%

The sample is free of any major defects, has less than 7.5% minor defects and is hard to firm. The fruit has a good coloration for the variety and a good shape and calibration. The fruit does comply with Olympic Fruit CLASS I color plates and requirements.

BORDERLINE CLASS I TOLERANCE: 7.6% - 10.0%

The sample has minor defects between 7.6% and 10.0%. The fruit is hard to firm, has fairly uneven coloration and shape. The fruit is on the border of the allowance for CLASS I fruit.

NORMAL CLASS II TOLERANCE: >10.0% The sample has minor defects between 10.0% and 20.0%. The fruit is firm to sensitive, has uneven coloration and shape. The fruit does comply with Olympic Fruit CLASS II color plates and requirements.

BORDERLINE CLASS II TOLERANCE: >20.0%

The sample has minor defects between 20.0% and 30.0%. The fruit is sensitive, uneven in coloration and shape. The fruit is on the border of the allowance for CLASS II fruit.

INDUSTRIAL GRADE TOLERANCE: >30.0% The sample has minor defects of above 30.0%. The fruit can only be used for INDUSTRIAL purposes.

PUNNET PREPARATION

PUNNETS

Position the stems downward for a more appealing punnet presentation.

Place the main bunches, with a maximum of three bunches, STEM-DOWN into the punnet. You may fill the punnet with an additional bunch that contains more than three berries.

Avoid overfilling the punnet to prevent crushing and bruising the berries. Punnets must not be OVERPACKED .

Cut the bunch just below the second, third, or fourth lateral.

Place the punnet on scales to guide packing, ensuring the tare weight is set to 0. Ideally, a single primary bunch should be placed in the punnet, filling it appropriately. Orient all bunches with the stalks towards the base and the berries towards the top to enhance the punnet’s appearance. A small ‘make-up’ bunch may be added to reach the required weight, but make-up bunches must contain at least three berries. Loose berries must not be packed.

BUNCH SPECIFICATION FOR PUNNET FORMATS: 500G The punnet may contain up to three primary bunches and one additional bunch with more than three berries. No loose berries should be included. Color distribution should be approximately 50%:50%, but must not exceed a 60%:40% ratio for either colour.

PUNNET PREPARATION WEIGHT PREPARATION

Each bulk box or punnet must be weighed to meet the specified weight. If a punnet is underweight, it must be adjusted to the correct weight. The net weight is the weight of the grapes alone, excluding the packaging (e.g., the punnet). Gross weight includes the fruit, any moisture loss, and the packaging. To account for moisture loss over the product’s shelf life, an additional 4% weight should be included in all packed products. NET WEIGHTS (excluding packaging): 500G PUNNETS : Minimum 520g (500g plus 4% for moisture loss), maximum 560g. By the end of the shelf life, the minimum net weight must exceed the declared pack weight (e.g., 500g). The maximum net weight should not surpass 12% of the punnet weight; for a 500g punnet, this means not exceeding 560g. This limit is set to ensure even weight distribution and minimise bruising. Overweight punnets must be reduced, which can be costly.

Moisture tare at the time of packing is 4%, so a 500g punnet should weigh at least 520g. Underweight punnets need to be adjusted, which is also costly. Punnet tare weights differ between manufacturers. A typical 500g punnet weighs between 15 and 18g. When setting the punnet tare weight, calculate the average weight of at least 20 punnets.

PACKING THE BOX 4.5KG BOX

BASE PROTECTION Use bubble pads or corrugated card as a protective base, especially recommended for all white varieties.

PLASTIC BAG Before adding any contents, carefully line the box with a plastic bag. Ensure the bag is properly spread out and covers the entire interior of the box, including the sides. This will create a protective barrier, keeping the box clean and providing an additional layer of security for the contents once they are placed inside.

PAPER PADS Once the plastic bag is securely in place, lay a paper pad at the base of the box. The paper pad provides extra cushioning and helps absorb any moisture, ensuring that the contents remain stable and protected during transit.

THIN PAPER PADS After placing the initial paper pad at the base, add thin paper pads on top to create additional layers of protection. These pads help cushion the contents, reduce movement, and prevent any potential damage during transportation.

10 X 500G · Tilt one end of the box onto a raised surface at an angle of around 30°. · Place a bubble pad at the base of the carton. · Insert the liner, ensuring it fits snugly inside. · Align the rilleted line around the rim of the carton, using the “Pull to Display” marking as a guide. · Place the first two punnets horizontally in the bottom right-hand corner of the box. · Continue arranging the punnets horizontally until all 10 are securely placed within the carton. 4.5KG MIXED BOX · Prop one end of the box on a raised surface at a 30° angle to facilitate packing. · Place a bubble pad on the bottom of the carton. · Insert the liner so it fits properly within the box. · Include 6–8 approved carry bags or polycote paper bags, each weighing between 400g and 800g. · Arrange the bags neatly to avoid bruising or damage. · Add the Sulphur and MAM sheets on top before sealing the carton. · Ensure the box-end label contains all the required details. PACKING THE BOX 4.5KG BOX

BULK PACKING · Tilt one end of the box on a raised platform at an angle of about 30°. · Place a bubble pad in the base of the carton. · Insert the liner so it lines the interior and extends over the top edges. · Position three or four bunches vertically along the bottom of the carton, with their stems pointing upwards. · Add the next row of bunches above, carefully laying them over the ones below to prevent any damage to the produce. FINISHING ACROSS ALL FORMATS · Place a Sulphur Pad over the top of the contents, ensuring the glossy printed side faces away from the grapes. · Pull one side of the liner over the contents, followed by the other, and secure them together with a piece of plain white tape. · Fold and tape down the top edges of the liner to neatly finish the carton.

PLEASE DO NOT use long sections of sticky tapeand tissue paper. If tissue paper is used it must be on to of the sulphur pad, not beneath it. If bottom sulphur pads are used, these are placed inside the liner, beneath the grapes. Only in case of Storage Program.

PLASTIC-IMPREGNATED SULPHUR PAD OR LINER ONLY Use only plastic-impregnated sulphur pads or liners – no paper pads. The top pad should cover the entire surface, while the bottom pad (1-3g) is for storage or extended transit. INSTRUCTIONS: ATTENTION ALL STORE STAFF: REMOVE AND DISCARD BEFORE DISPLAY

The liner should be made of HDPE, translucent, and micro-perforated with 1 or 2mm holes providing 0.6% ventilation. It should include a rillated tear-away line with instructions: PULL TO DISPLAY.

MAM SHEETS are placed on top of the grape boxes after packaging. These sheets serve as absorbent membranes, capturing any liquids or gases and helping to prevent mould on the grapes during transport. Sachet pads must be removed before sale, which will involve an

STACKING

PALLETS It is essential to confirm the pallet types with Olympic Fruit to ensure they meet the required specifications. Standard size is 1200mm x 1000mm x 160mm (L x W x H). As per Commission Directive 2004/102/EC, effective from 1st March 2005, all wood packaging material with a thickness greater than 6mm and originating from non-EU countries must undergo treatment to prevent the spread of pests. The acceptable treatments include heat treatment (HT), where the core temperature of the wood is raised to 56°C for at least 30 minutes, or methyl bromide fumigation (MB). Every pallet must bear an IPPC (International Plant Protection Convention) stamp, which includes the two-letter country code indicating the wood’s origin, the producer code, and the approved treatment type (HT or MB).

STRAPPING

FINISHED PALLETS To prevent movement and potential damage to the boxes, it is essential to strap the pallet securely. ATTENTION: Tightly strap the base layers during the pallet-building process. Use 12.5 mm wide straps and AVOID USING SUBSTANDARD MATERIALS that could snap or deteriorate during transit. Position the straps at the correct layer and height to secure the areas with the most outward pressure, typically the bottom third of the pallet. Ensure that only straps with CORNER PROTECTORS are used to prevent damage to the cartons, and make sure ventilation holes remain unobstructed. NO loose metal clips or fasteners inside the cartons or among the fruit.

PALLET SECURING SHEETS , made from materials like cardboard or plastic, are inserted between stacked products on pallets to protect them from damage, stabilise loads, and aid organisation during transport and storage. The PALLET CAP is necessary for every pallet to minimise damage to the top cartons and reduce contamination.

EURO PALLET

The Euro pallet, often referred to as a baby or small pallet, measures 1200mm x 800mm. It adheres to the same phytosanitary standards as standard pallets, ensuring compliance with international regulations for safe and sanitary transport of goods. See PAGE 36 for details. When loading a container, a 22-pallet layout can accommodate 20 standard pallets (1000mm x 1200mm) alongside 1 Euro pallet (800mm x 1200mm). This configuration optimises space while maintaining efficient and secure storage.

TEMPERATURE RECORDER

All consignments, whether by lorry or container, must include a temperature recorder. This recorder should be placed inside a carton of grapes positioned midway up the pallet, with the carton clearly marked to indicate its location. The pallet must also be marked on all four sides to identify that it contains the temperature recorder, ensuring easy recognition. Additionally, this pallet must be recorded on the PACKING LIST sent to Olympic Fruit.
